
First Watch will soon start serving up its signature avocado toast and million dollar bacon to Reston diners.
The daytime cafe chain is set to open in the former Carrabba’s Italian Grill at 12192 Sunset Hills Road near RTC West next Monday, May 19, a First Watch spokesperson told FFXnow, confirming a report by The Burn.
To celebrate the launch of its newest Fairfax County location, First Watch will offer unlimited Project Sunrise coffee with every meal.
Launched in 2018, the company’s Project Sunrise sources coffee beans from Huila, Colombia, as part of a partnership with Mujeres en Café, an organization of female coffee farmers.
Open daily from 7 a.m. to 2:30 p.m., First Watch’s Reston restaurant is 6,500 square feet in size with a patio and a bar. It can seat over 170 people and will employ a total of about 30 workers.
“We usually start hiring for a new restaurant approximately one month out from opening,” the First Watch spokesperson said. “The Reston opening will create approximately 30 new jobs in the community and will operate on a one-shift a day, ‘No Night Shifts Ever’ approach that enables its teams to enjoy their evenings.”
Initially, the Reston restaurant will serve First Watch’s core menu, with breakfast, brunch and lunch options ranging from salads and sandwiches to pancakes, omelets, and granola and oatmeal bowls. In addition to coffee, drinks include juice, iced coffee and brunch cocktails.
The chain also has a seasonal menu that rotates five times a year based on the “position of the sun to source fresh ingredients.” That will be introduced in Reston for the first time this fall.
Based in Brandenton, Florida, First Watch opened its first cafe in Pacific Grove, California, in 1983 and has over 500 restaurants nationwide, including a growing number in Fairfax County. Most recently, it opened a location at Idylwood Plaza in February, and a Groveton spot is expected to arrive in early June.
Located at Beacon Center in a former Boston Market (6650 Richmond Highway), the Groveton restaurant will be smaller than its Reston counterpart at 3,300 square feet with approximately 130 seats and a covered patio.
