An upscale omakase restaurant has its sights set on Reston for its next “sushi speakeasy.”
Sushi by Bou appears to be expanding with a new location inside the Hyatt Regency Reston (1800 Presidents Street), near Capital Grille. The restaurant — a high-end chain self-described as “an exclusive omakase hideaway where tradition meets innovation” — offers just three omakase spreads to choose from, along with various sides, spirits and cocktails.
The restaurant has applied for a commercial alteration permit and liquor license to open in the hotel’s former 790-square-foot gift shop space. The setup is consistent with the eatery’s reputation in New York City for turning small utility spaces into sushi bars.
The Reston location will feature a 15-seat sushi bar, a 10-seat cocktail bar and a lounge that can accommodate 18 occupants, according to a building plan submitted to Fairfax County in mid-May.
Sushi by Bou has 20 locations in major cities across the United States and Puerto Rico, each with a unique themed atmosphere and interior. The nearest is in D.C., at the citizenM hotel in L’Enfant Plaza, where it operates a disco-themed rooftop venue.
“Neon lights, mirrored surfaces, and vibrant colors paint the world of Disco Sushi, where the upbeat energy of the disco era meets a sophisticated and modern elegance,” an online description reads.
In D.C., Sushi by Bou’s omakase dining starts at $70 per person for a 12-course, hour-long “signature omakase.” Two other 17-piece packages start at $100 (“bougie omakase”) and $150 (“reserve omakase”), with extra add-ons like caviar and sake flights.
In addition to dining, Sushi by Bou offers catering packages while hosting private parties, events and group handroll classes, which start at $120 per person.
The restaurant has not yet confirmed the Reston location on its “coming soon” page, which features just one upcoming spot in Tempe, Arizona. The business did not return a request for comment.
